Inside Expo West: Oshi Co-Founder Introduces Plant-Based Fish Fillets
Seafood without the fish.
While at Natural Products Expo West, Seeing Green spoke with Ofek Ron, co-founder and CEO of Oshi, about the company’s breakthrough plant-based fish fillets designed to look, cook and taste like traditional seafood.
Oshi has developed proprietary machinery that creates fish fillets “flake by flake,” replicating the natural texture of fish using ingredients such as algae oils, fungi and other plant-based components. The result is a white fish fillet and salmon fillet that deliver the familiar seafood experience while avoiding concerns such as mercury, antibiotics and microplastics.
In this conversation from Expo West, Oshi’s co-founder explains how the technology works and introduces the company’s flagship plant-based white fish and salmon fillets. Oshi products are currently available through direct online ordering and in more than 100 restaurants across the United States, with select retail availability in New York and California.
