Next Level Veggie Grill Brings Plant-Based Comfort Food Into Fall

Limited-time Fall Harvest menu features Beyond Steak, a Bavarian-inspired burger and plenty of pumpkin spice — helping make sustainable food choices familiar, craveable and accessible

Fall menus have arrived, and Next Level Veggie Grill is giving the season an entirely plant-based spin.

The restaurant group has rolled out its Fall Harvest Features, a limited-time collection that ranges from hearty savory dishes to the perhaps inevitable return of pumpkin spice.

On the savory side, the new Harvest Protein Bowl combines seared Beyond Steak tips with roasted vegetables, dried cranberries and spiced pepitas over brown rice and power greens. The Bavarian Pub Burger goes decidedly more indulgent, pairing a Beyond patty with sautéed onions, pickles, tomato, creamy cheese sauce and horseradish aioli on a toasted pretzel bun.

And for those ready to fully embrace fall, the returning Pumpkin Spice Shake is hand-spun with organic pumpkin and autumn spices, while the Pumpkin Spice Cake is an organic pumpkin mini bundt cake topped with cinnamon-spiced icing and chopped walnuts.

More Than a Seasonal Menu

Seeing Green recently featured Next Level Veggie Grill as a Solutionist of the Day, looking at the larger story behind the restaurant group and its effort to bring plant-based eating further into the mainstream.

Next Level Veggie Grill emerged after Next Level Burger acquired longtime plant-based restaurant pioneer Veggie Grill in 2024. The combination brings together two somewhat different traditions: Next Level Burger’s burgers, fries, shakes and familiar comfort food with Veggie Grill’s broader menu of bowls, salads, sandwiches and seasonal offerings.

That mix is important to the company’s larger mission.

Rather than designing plant-based restaurants solely for committed vegans or vegetarians, Next Level Veggie Grill is trying to make the food appealing to a much wider audience—including flexitarians and people who might simply be curious about eating more plant-based meals.

It’s an approach that fits closely with how we think about sustainable living at Seeing Green: making the more sustainable choice easier doesn’t always require asking people to give something up. Sometimes it means giving them another option that looks delicious in the first place.

A pretzel-bun pub burger, hearty harvest bowl or pumpkin-spice shake may not immediately scream “climate solution.” But replacing animal-based foods with plant-based alternatives can reduce the environmental footprint associated with what we eat—and making those alternatives familiar, accessible and craveable can help bring more people along.

And if pumpkin spice helps? Well, it is fall.

The Fall Harvest Features are available for a limited time at participating Next Level Veggie Grill, Veggie Grill and Next Level Burger locations, with some menu items varying by restaurant.
